Plavac Mali is widely planted in Croatia but the vines growing on the south side of Hvar really shine. The rich plum and raisin flavours are underpinned by dark chocolate and herbal notes much like its parent, Zinfandel. Hand plunged to minimise extraction and aged in French oak barrels with just a little addition of Slavonian oak spiciness. One of only 4,000 bottles made. Minimal filtration and stabilisation treatments were used and a sediment may form in the bottle.
Wild Skins is a blend of three varieties found on the island of Hvar - Kuć, Bogdanuša and Pošip. Each variety was fermented with natural yeast and kept on skins for up to a month to bring out all the flavour and structure of the varieties. Left sur lie for 9 months with regular battonage. Sulphur only added before bottling. Minimal filtration and stabilisation treatments were used and a sediment may form in the bottle.
This Pošip is made from closely planted vines on the south side of Hvar. The vineyard is picked in three parcels to retain acidity and gain complexity of flavour. Zesty limes sit alongside peach and finally pineapple notes from the ripest fruit. The wine has been keep sur lie for 9 months with regular battonage to add texture. Minimal filtration and stabilisation treatments were used and a sediment may form in the bottle.
